I have a couple of Nigella recipes on the list this month. I’m trying my hardest to revisit some of my older books. This can be found in Nigella – Kitchen.
- Cut some chicken thighs into bite-sized pieces
- Grate some ginger
- Chop some coriander
- Slice some spring onions
- Get dry sherry, mirin, soy sauce, soft brown sugar, sesame oil, vegetable oil & seasoning ready.
Mix the sherry with the mirin, soy, brown sugar and sesame oil.
Season the chicken pieces then add the the marinade. Don’t worry, this is one of those quick marinades. Fifteen minutes will do.
Get a little oil up on a high heat then add the chicken, along with the marinade.
Stir fry until cooked.
Serve with sushi rice and sprinkle with the spring onions and coriander.
