Easy breakfast for those mornings you want something delicious but don’t have that much time.

Breakfast Quesadilla

Ingredients:

1 Tbsp. butter

2 eggs

2 tortillas

½ cup Mexican blended cheese

1 Tbsp. oil

Directions:

Heat over medium-low a skillet with butter. Add eggs and scramble. Continue to mix until just before fully cooked about 2 minutes. Remove eggs and spread on tortilla and add salt and pepper. Sprinkle cheese on top and then other tortilla. Heat skillet again with oil over medium-high. Place quesadilla in pan cook on each side for one minute till crispy and cheese has melted. Serve with salsa, sour cream and hot sauce.
