Dishes made with zucchini (also called courgette) are popular in Georgia. There are many variations and in this family recipe we show how to make fried zucchini with a spicy walnut sauce.

Zucchini with WalnutsIngredients: 1 kilo of zucchini, 400 grams of walnuts, 50 grams of fresh green coriander, 50 grams of fresh parsley, 1 medium sized onion, 3 large cloves of garlic, 1 or 2 hot green peppers (optional), three-quarter tsp of dried coriander, three-quarter tsp of dried marigold, half tsp of blue fenugreek, 1 level tsp of hot red pepper (or less, dependent upon taste), 10 tbs of vegetable oil (for frying zucchini), 50 ml of boiled, cooled water, 3 tbs of white wine vinegar, and salt (according to taste).
