A Chinese friend made this fish for me, and I was instantly hooked. I just couldn’t get enough.

Although the dish is traditionally prepared with a steamed cabbage, I prefer to serve it with a crispy, fresh salad.

Asian steamed Snapper & salad

Serves: two

Ingredients

Fish and rice

Small whole Snapper, gutted and scaled (ask your fishmonger)
Tube of ginger
Coriander
2 tablespoons peanut oil
2 tablespoons shao hsing wine
2 spring onions finely sliced
3 tablespoons soy sauce
1 teaspoon white sugar
1 cup Jasmine rice
1 cup Water

Salad

Two cups cabbage
One carrot
Coriander
2 spring onions finely sliced
1 tablespoon rice wine vinegar
1/3 tablespoon sugar
1 tablespoon soy sauce
1 tablespoon minced ginger
2 teaspoons sesame oil
2 tablespoons peanut oil
1 teaspoon lightly toasted sesame seeds (optional)

  1. Rinse your rice under cold water. Pop the rice and the water into your rice cooker and switch it on.
