Buffalo Chicken Salad

I tried a buffalo chicken salad meal at my favorite Paleo lunch spot – Green Goodies in Oklahoma City a few weeks ago and just had to try recreating this recipe. It was easy, tasty and oh-so-delicious!

Ingredients:

  • 3 cups cooked, shredded chicken
  • 1/4 cup Frank’s hot sauce
  • 3/4 cups shredded carrots
  • 3/4 cups chopped celery
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 3 chopped green onions
  • 2 tsp dried parsley
  • 1 cup Sir Kennsington mayonnaise (or other homemade mayo)


Throw everything in a big bowl, stir, serve! I spooned some into a Julian Bakery Paleo Wrap and it made the meal even more perfect. Total hit!
