Cherry Coffee Cake

A New Neapolitan

Unlike most coffee cakes that come with a side of insulin, this coffee cake is sweet enough to be called cake and healthy enough to be considered a breakfast treat.  Of course this isn’t as healthy as a bowl of oatmeal (in my case, it might actually be though…), but that shouldn’t stop you from enjoying a slice of cake with your morning coffee!

After a lot of failed attempts, I am happy to say that this cake was worth the time (and ingredients) spent.  I decided to use half whole wheat flour for added fiber, but not too much to make the cake dry and dense.  I also decided to cut out all of the butter and the crumb topping that is usually found on top of coffee cakes and replaced them with healthier alternatives; a mix of coconut oil and greek yogurt for the fat, and fresh fruit…
