Chickpea Salad With Quinoa

Enjoy one of my favourite recipes EVER!


YOU NEED: 1 can chickpeas, 2 handful cooked quinoa, green onions, cocktail tomatoes, sun-dried tomatoes pickled in oil & some of that amazing tasty oil , black olives, parsley, lemon juice, cumin, roasted pine nuts, salt, pepper, olive oil

I am a little-bit-of-this and a shot-of-that kind of girl when I cook. So choose the portions of all ingredients depending on your taste. If you like sun-dried tomatoes, take more of it. And if you like it green, take more of parsley or green onions or add even leaf spinach. Everyone to his taste, right.

WHAT TO DO: Mix everything well together in a big bowl and enjoy your meal!

INSIDER TIP: Warm quinoa helps to combine better all the delicious flavours, so mix it as long as it’s warm. Keep it in fridge up to one week. I recommend some delicious walnut baguette if you like.
