Frittataliciously Good Frittata


Cook a good breakfast for yourself, and you’re all set for the day.  Cook breakfast for someone, get major pogi points.

The Refrigerator
  • 5 medium eggs
  • 1 small potato or several marbled potatoes
  • 50 grams of cheddar cheese
  • Cheese spread
  • 1 spoonful of corned beef, bacon, or pastrami
  • 4 olives or 1 small tomato
  • salt and pepper

In a large bowl, whisk 5 eggs until they double in volume. Make sure you use your muscles to incorporate a lot of air into them.  To get an even workout for your shoulders and biceps, switch hands after 20 to 30 seconds of whisking.

Cherry Coffee Cake

Unlike most coffee cakes that come with a side of insulin, this coffee cake is sweet enough to be called cake and healthy enough to be considered a breakfast treat.  Of course this isn’t as healthy as a bowl of oatmeal (in my case, it might actually be though…), but that shouldn’t stop you from enjoying a slice of cake with your morning coffee!


After a lot of failed attempts, I am happy to say that this cake was worth the time (and ingredients) spent.  I decided to use half whole wheat flour for added fiber, but not too much to make the cake dry and dense.  I also decided to cut out all of the butter and the crumb topping that is usually found on top of coffee cakes and replaced them with healthier alternatives; a mix of coconut oil and greek yogurt for the fat, and fresh fruit…

Soft and Chewy Chocolate Chip Cookie Recipe

There have been many times when I wanted to bake but I didn’t know what I wanted to bake. Whenever this happens, I always decide to make chocolate chip cookies. However, I have yet to find, and save, a good recipe. If the cookies didn’t become hard and crunchy shortly after cooling, I would lose the recipe. It seemed like I couldn’t keep a good chocolate chip cookie recipe. All of this changed when I found this one. Before I made these cookies, I expected the same outcome. I don’t think I was ever this happy to be wrong. They were yummy AND soft!

Curry and Almonds Chicken

  • 2 Chicken Breasts
  • 1 cup Flour
  • 1 tablespoon Butter
  • 4 oz Slivered Almonds
  • 2 cups Chicken Broth
  • Curry
  • 1 pinch Salt
This may sound like an extremely ethnic recipe, but it’s actually very mild and everyone will enjoy it. You can use two chicken breasts or a whole chicken. I prefer the breasts because I’m as fussy as a little kid and I don’t want to deal with bones and skin. I like to serve the chicken on a bed of rice. If you choose to do the same, check the cooking time of the rice and remember to cook it sufficiently in advance.
